Italian Hamburger Soup Recipe – ground beef, onion, peppers, garlic, diced tomatoes, green beans, tomato sauce, tomato paste, Worcestershire sauce, beef broth, Italian seasoning, and pasta. Perfect for chilly evenings or anytime you crave a hearty meal. Pair it with garlic bread, a fresh salad, and a sprinkle of Parmesan cheese for a complete meal.
In a Dutch oven, cook the beef, onion and bell pepper over medium heat until meat is no longer pink. Add garlic and cook 30 seconds. Drain excess grease.
Stir in remaining ingredients. Bring to a boil. Reduce heat and simmer for 20 to 30 minutes.
Notes:
You can substitute ground turkey, ground chicken, or ground pork.
Feel free to mix up the veggies in the soup:
carrots
celery
corn
spinach
kale
You can use any small pasta shape in this soup. Elbow macaroni is a good substitute.
You can substitute diced potatoes for the pasta.
Red potatoes, Yukon gold potatoes, or russet potatoes work well.
Can I make Hamburger Soup in the crockpot? Yes. Brown the ground beef, onion, and bell pepper. Place the beef mixture in the slow cooker. Add the remaining ingredients except the pasta to the crock pot. Cover and cook on LOW heat for 6 hours. Add the pasta and cook on HIGH heat for 15 to 20 minutes, until the pasta is tender.
Can I freeze Hamburger Vegetable Soup? Yes. Cool the soup to room temperature. Place the soup in freezer-safe containers. Store in the freezer for up to 4 months.
Thaw and reheat on the stovetop or in the microwave.
You may need to add more liquid to the soup after freezing. The pasta will absorb some of the broth.
If making this soup exclusively as a freezer meal, add the pasta when you reheat the soup.
Store leftovers in an airtight container in the fridge.
